Keep in mind that Cars is outperformed Ratatouille, Toy Story and A Bug's Life, and will likely move ahead of Toy Story 2 in the next few months. Cars was panned by the critics, but the general public ate it up. It's merchandise has outsold Nemo 10 to 1 and is still going strong 18 months later. To your point, yes, Pixar movies are making big money and expect Pixar-based rides as long as they are successful which will generate more revenue and in turn create more new attractions at the parks, etc...

Cloning is a great way to shave off a truckload of engineering and construction costs and it keeps things relatively headache free too by knowing well ahead of time the ACTUAL(not the proposed budgets)total costs, breakdown and guest traffic patterns. And my theory, although I can not test/prove it, is that the public will readily accept almost anything Disney throws their way be it Pixar or no Pixar if an attraction is done with taste, beautiful visuals and quality sound.

I doubt I would go if all the attractions were C-ticket Pixar rides though. And Cars, while successful, is not a very good movie (it's Doc Hollywood without the nudity). Success does not always equal good. Look at Britney Spears for god's sake.
