So pulled pork means you get you a slab off of the pig but you PULL it apart, making it all kinds of stringy let us say. So, you PULL literally the meat apart and slap it on a bun or on a plate or on a salad and voila, you have pulled pork. It also goes further pulled apart I may add. Now, that is only half of it. I personally am an "outside meat" lover myself, not "inside only." What is that? Well it's this: When you roast this beast, there is meat near the surface that invariably gets, let us say...toasted, burned a little, or charred per se. If when you pull the pork and you get some of that charred stuff on the ends of the pulled meat, that would be considered "outside meat." There are many of your less savvy BBQ eaters, (certainly no self respecting southerners) that will order "Pulled Pork, Inside Meat Only" in which they will get a helping of pork that has NO charred bits about the ends of the meat. Some of your larger chain type restaurants will ONLY serve inside meat, as you really have to gnaw on "outside meat" sometimes. This is why outside meat isn't a big hint with the denture wearers. So anyway you really need to go to a real dump, a real seedy and scabby hole in the wall dive of a BBQ joint in Georgia or Alabama to get some real fine "Pulled Pork Outside Meat." So when you think of pulled pork, inside vs. outside meat, well... it's kind of like comparing Ham to Bacon. Its the same stuff but hehehehe something about that fire charring that meat makes for a real delicacy. Next week come back and I will teach you Yanks over in the UK what it means when you hear... "Hey momma, you sure put a good scald on this here chicken. Did you use butter milk or just milk?"
