When you bake an empty pie crust, for example you are baking a crust for a cream pie--the crust needs to be baked, but the filling doesn't, these little ceramic bbs go in the bottom of the crust. They keep the crust from "bubbling" up, and help it bake more evenly. I don't bake a whole lot of pies, much less empty pie crusts, but there you go, I have them if I need them!
