ps. Could it be that people choose restaurants as favs based on cuisines not offered (or at least not well prepared)around where they live???

As a vegetarian, let me try to answer this.
I see your point about a vegetarian giving a review of a seafood restaurant or a steak house or some place where the obvious specialty is meat (not that a vegetarian shoudn't eat in such a place, but that one shouldn't really look to them for an opinion on the food there).
But then you go on to suggest a vegetarian isn't qualified to "give an accurate assessment of dining locations at WDW, or anywhere else". I think that's a bit much. I mean, many of the restaurants have lots of veggie entrees including ones they are famous for -- Alfredo's comes to mind. I've been to Alfredo's and eaten their famous fettucine Alfredo (along with several other dishes) so I'd guess I'm qualified to properly review that place, right, despite the fact I didn't order any chicken on the side? And how about Boma? The majority of the food at that restaurant is vegetarian. It has won vegetarian awards. I'd say a review I'd give of that place would be a fair assessment as well.
(For the record -- I found Alfredo's to be pretty good, but definitely over-rated and over-priced; Boma I found to be excellent).

Well, I know what's available locally for me does influence my choices. For example, with a choice of a few teppanyaki restaurants locally, I don't bother eating at Teppanyaki.

Seriously, there is a place here in Atlanta called PapaDeaux, in fact I there may be one in your city, anyway, the catfish is among the best anywhere and this isn't a low budget, ma and pa eatery I am talking about.

There is such a low budget hole in the wall place in Agusta GA, and the catfish are even better there! I wish I had a quarter for every catfish...

I LOVE fish -- and shellfish as well ( not a big calamari fan but I will eat it fried ) - I eat fish on the grill / baked / broiled / blackened etc....it is something withthe after taste of catfish I just don;t like.....

I liken this somewhat to lamb, which I know a lot of people like and I can't stand due to the gaminess..

Fair enough! At least you have tried it. I think living in GA I began eating catfish at a very young age. I remember my dad and I catching supper now and then during our few father/son camping trips on the Flint River. The catfish itself, I'll admit, isn't a 4 star dish, but the aroma, the flavor, the "oiliness" or "fishyness" of it intermingles with fond memories and mighty powerful nostalgic feelings that come flooding back to me just by eating it. I don't eat it often, maybe once every couple of years, but it's a unique thing for me...sort of like the Cherry Berries I used to get at Six Flags as a kid.

Plain and simple, if you don't like something chances are slim that you will have it prepared in a way that you will suddenly like.
