I keep popping on and off the diet train. The last two days, I've done well. Except this afternoon!!! My son drops by with lunch from KFC/Taco Bell......
The train has left the station. We rushed to the hospital when we got word that Rod's mom had another heart attack. (She is okay.) When his cousins realized none of us had eaten they took us out to lunch. I had a wonderful meatloaf and gray sandwich with rice. Hey! There were steamed veggies on the side and I ate them all.
I baked a turkey roast. I was going to make sandwiches with it but then I thought, 'ah, what the heck." Found a box of Stove Top Stuffing, made some potatoes, gravy, green beans, and even found a can of cranberry sauce.
That sounds great. We had a rough day yesterday and ended up needing to eat out. Now, there are fairly healthy places around; but we went to L+L (Hawaiian BBQ) and ordered combos with way too much food and indulged in Hawaiian Sun soft drinks.
Not actually the last thing I ate (that would be one of the oatmeal cookies I'm baking), but for dinner this evening, I cooked the second batch of the turkey schnitzel I'd breaded up last month. Now keep in mind: these are schnitzel that I trimmed, pounded out, and breaded up myself, not a pre-packaged product. And I did not cut them to a specific shape; that would be a waste of time. But while they were in the frying pan, I happened to notice that one of the schnitzel had assumed a shape that any Star Trek fan would instantly recognize.
That is pretty cool. Saw it right off. My sister and her husband do a Keto type of thing. This AM they prepared eggs and homemade sausage with a *bread* made of almond flour, eggs and cheese. Amazingly like any other bread. It was all tasty.
Drinking a Starbucks latte that was free to me thanks to the person in front of me in the drive thru. I paid for the person behind me...kinda' made my day.
What a neat thing. I used to love to pay the toll for the person behind me on the San Francisco Bay Bridge. (It is all automated now so you can't do that anymore.) My sis made omelets stuffed with all kinds of goodies, Emma's mom sent donuts and Rod and I split one and had some coffee.
