    Real shorcakes are scones, pastry cream, berry compote, and chantilly cream(chantilly cream is a fancy schmancy word for lightly whipped cream, no peaks! A thickened but pourable consistency).

    We usually use poundcake instead of shortcake, DLfreek. I'm too lazy to make either from scratch although I have made tart shells and filled them w/strawberry compote and whipped cream. Sometimes we use Cool-Whip but most of the time we use real whipped cream. We also prefer sweetened whipped cream over unsweetened and I usually whip it to a bit thicker consistency than chantilly cream. Oddly, I sometimes like a little half-and-half poured over pies or cobblers. My great-grandma used to serve it that way. Mmmm :)
