    We're still going to have cinnamon rolls and orange juice, but I am going to also make up a pitcher of Bloody Marys too. (Which I have never made before but it sounds tasty. I'd make mimosas but champagne gives me an instant migraine. Vodka better.) ;-)

    I finally got the grocery list for the holidays done. That makes me very happy.

    I decided at the last minute that I was going to make a batch of homemade marshmallows for my SIL's family. I am going to put them in cellophane bags and put them in a basket with hot chocolate mix, mugs, a small whisk and homemade cinnamon rolls. If I can find some cute dessert plates, I might put those in too. Kind of a cute Xmas morning breakfast gift for them.

I get up between 3 and 4 to start the dough so by the time the kids open packages and such, it is done and soon after the warm smell is coming out of my oven. I was going to cheat this year and buy the premade ones but the kids and my dad through a fit that we cannot have store bought ones.

    Filling:
    1 cup packed brown sugar
    1 ½ T cinnamon
    1/3 cup margarine, softened

    Icing:
    8 T (1 stick) margarine, softened
    1 ½ cups powdered sugar
    ¼ cup (2 oz.) cream cheese
    ½ t vanilla extract
    1/8 t salt

    1. For the rolls, dissolve the yeast in the warm milk in a large bowl.
    2. Mix together the sugar, margarine, salt and eggs. Add yeast. Add flour and mix well.
    3. Knead the dough into a large ball, using your hands dusted lightly w/flour. Put in a bowl, cover and let rise in a warm place about 1 hour, or until the dough has doubled in size.
    4. Roll the dough out on a lightly floured surface. Roll the dough flat until it is approximately 21 inches long and 16 inches wide. It should be about ¼ inch thick.
    5. For the filling, combine the brown sugar and cinnamon in a bowl. Spread the softened margarine evenly over the surface of the dough, and then sprinkle the cinnamon and sugar evenly over the surface.
    6. Working carefully from the top (a 21-inch side), roll the dough down to the bottom edge.
    7. Cut the dough into 1 ¾ inch slices and place 6 at a time, evenly spaced, in a lightly greased baking pan. Let the rolls rise again until double in size (about 30 mins). Preheat oven to 400 degrees. Bake for 10-15 minutes or until light brown on top.
    8. While the rolls bake, combine the icing ingredients. Beat well with an electric mixer until fluffy. When the rolls come out of the oven, coat each generously with icing.

    Makes 12 Rolls

    These rolls can be frozen after baking. Just pop one into the microwave for 20-30 seconds to reheat.

    I've never tried this, but I think you can let yeast dough rise in the fridge overnight. It takes a lot longer but it will still rise. I bet you could make the dough in the evening, then roll it out, let it rise again and then bake it.

    I'm afraid to try it. ;-)

    If it doesn't work, I'll be making another batch tomorrow night. Thankfully, once dinner is done and the dishes washed, I don't have much to do. We just read stories together.

    Linnie is wide awake still. She is so excited and will probably keep us up for most of the remaining 30 hours until we open presents. LOL

    So, I rolled out the dough and spread butter all over it and then realized I had doubled the recipe but hadn't bothered to roll it out to twice the length. One of the nice things about these rolls is that there is supposed to be lots of thinner layers of buttery bread...so these will be a lot thicker.

    Oh well, maybe no one will notice if I add more frosting. :-D

    I made great cranberry bread last night. We started in on it this morning. Very simple.

    I let the dough sit at room temp for about a half an hour...then I rolled out the dough, got the cinnamon rolls ready and let them rise for about 40 minutes in a warm oven (I heated it at a low temp and then turned it off, left the door open, just to make it warm but not to cook the dough). Then baked them for 15 minutes. They turned out really yummy!

    Well, I'm off to my SIL's. Wish me luck. LOL
