Disney is typical for entertainment companies today (hell, the fact they let Pixar produce such quality almost puts them on top). UNI may have hit a huge homer with Potter, but it isn't typical of what kind of company they are or how they run parks. Their new park in Singapore has been a typical disaster at opening. Best bet is to be your own boss and create/consult for the big guys.

And I want to be my own boss, but I'd like to get some industry experience before jumping into that ocean.

I've known many great CMs who were much more dedicated and qualified get denied over and over and over again. If I were you, I'd do the college program, attend every damn networking event, kiss ass, give out and collect business cards, practice phone interviewing, and spend every day scrutinizing and perfecting your resume. Also, pray/sacrafice/whatever you need to do to get in.
